Healthy Meal: Pan-Seared Scallops with Ginger-Orange Spinach

Last night, I skipped my late night workout in favor of trying to get a bit more sleep, since I had woken up tired. That meant I only got in 45 minutes on the elliptical as my total workout for the day. I love that these days I refer to a 45 minute workout as “only” 🙂 I got up again at 7am this morning, but this time didn’t have much trouble getting off when my alarm went off. I considered going for a run sometime today, but what got me out the door was that if I didn’t go …

Back on the Wagon

Sorry for the six day disappearance – it would seem that I never get around to posting on my good days. Okay, not that this weekend constituted “good days.” I mean, they were fantastic days from a fun perspective, and from a Mexican perspective as well… but not so much from a diet standpoint. Saturday afternoon, I went to Mexican brunch with my book club, then went for Mexican dinner with my college girlfriends, then went to a dive bar and played Jenga all night long, reveling in the fact that I didn’t have to get up for a marathon …

Interview #1: New York Nightly News with Chuck Scarborough

Last night, my world record breaking self appeared on New York Nightly News with Chuck Scarborough. It was a crazy experience! The show was from 7:00pm-8:00pm, but I wasn’t going to be on until the last ten minutes, so I didn’t have to get there until 7pm. When I arrived, I was shown to the greenroom, told that the makeup room was next door, and that someone would come get me when it was time to go on. No more instructions than that! I’m a big girl though, so I got a little makeup touchup (really just a little powder …

Virginia is for lovers April 17

This weekend, I was supposed to run the Virginia Creeper Marathon on Sunday. I don’t know what it is, but Virginia just seems to be a terribly unlucky state for me… I never get there and never make it to the race (Richmond Marathon non-report still to come)! This week, the issue was just that the flights were too full for my standby-traveling self. With 16 people ahead of me on the standby list (for a sold out plane that only holds 100 people), I decided not to even bother making the trek out to the airport and wasting my …

Book clubs galore and a productive Thursday

Last night was a total blast! In the last year, I’ve joined a bunch of book clubs (some serious, some light). Last night, one of them met at this great Italian restaurant that offers ladies’ night on Wednesdays: all-you-can-drink house wine with the purchase of any entree. Perfect! I got a vegetable thin crust pizza and a ton of red wine – great way to get through the midweek slump 🙂 This morning, I woke up a few minutes before my alarm went off. Now, I set two alarms: one for 6:45am (my early alarm, if I decide to work …
