Healthy Meal: Curried Butternut Squash Soup and Waldorf Salad with Epic Dressing

Today’s lunch is really combining two favorites. I love butternut squash soup because it’s so healthy, but thought I would try a different recipe to mix it up. My old recipe for butternut squash soup has an apple thrown in, so I thought maybe I’d combine it with a favorite Waldorf salad of mine that has apples in it… Um, so I totally just went to go find the link to the last time I posted butternut squash soup, and realized I had eaten it with this salad! Wow, am I predictable or what. This time I used grapes instead …

Top 10 Flavors to Watch in 2008

Just when you thought all the 2008 prediction lists were winding down, I’m dug up another. Since this blog is clearly cutting-edge (ha!), I thought I’d go through Meatless Monday’s list of Top 10 Flavors to Watch in 2008. Lately I seem to be all about comparing myself to various lists, so I’ll continue the pattern: Pomegranate – I rarely eat pomegranates; maybe this is something to add to my new/rotation produce list? I had some pomegranate-flavored liqueur (Pama brand) at Thanksgiving, but that’s about it. I will say that the liqueur was delicious just mixed with seltzer, so that …

Healthy Meal: Greek Meatballs in White Wine Sauce and Baked Gigante Beans

I’ve had these recipes in my online Food Network recipe box, and today I had ground turkey to use up, so I figured it was the perfect excuse! However, I wasn’t that impressed. Yeah, the pictures kind of suck too. I didn’t really take the time to pretty up the meatballs because I couldn’t figure out how once they had started falling apart. The beans look decent though, and you can also see the Greek salad I made to go with it. Meatball recipe notes:I used lean ground turkey instead of the meats, because it was what I had, and …

Healthy Meal: Middle Eastern Chicken Pot and Butter-Nut Couscous

Today I was bored and channel surfing, and I saw that Rachael Ray’s 30 Minute Meals was on Food Network. I have a sentimental fondness for Rachael Ray, because watching her was how I first learned to cook. In fact, a lot of the recipes on this site come from her recipes, though I rarely take the time to watch the episodes. It was fun to once again watch her on TV and then make the meal later that night. Recipe notes:I cut the olive oil in half and used lean chicken breast instead of thighs, both to reduce the …

Healthy Meal: Wild Mushroom and Eggplant Ravioli with Snapper Acqua Pazza

Ugh, I just made the worst dinner ever. Honestly, part of it was absolutely inedible… yet I ate it anyway because of my stupid hangup about not wasting food. I wasn’t pressured when I was little or anything, but for some reason I feel incredibly guilty letting food go to waste. Clearly not the best philosophy for my diet, but I can’t seem to shake it, so I just try to make sure I only make/serve small portions so it’s okay to finish. Anyway, I made this combination of wild mushroom ravioli with eggplant, and red snapper acqua pazza. The …
