Healthy Meal: Minestra

Yesterday we had our quarterly staff meeting. QSM involves sitting around at meetings, eating tons of delicious but unhealthy food. It always culminates in cocktail hour starting at 4 PM, and then company-sponsored after-parties where you can basically keep eating hors d’oeuvres and drinking until 4 AM. Unfortunately, I did just that… and managed to eat more than 4,000 calories! Unbelievable. Everything was really high-cal (cookies, brownies, various fried hors d’oeuvres, etc), but I still can’t believe how much I was able to eat. Healthy Meal: Champagne Chicken and Baby Beluga Lentil Salad

When I was at Trader Joe’s yesterday, the sample of the day was black beluga lentils on a bed of lettuce, with a balsamic vinaigrette on top. Healthy Meal: Finnish-Style Split Pea Soup

Today for lunch, I present Finnish-Style Pea Soup. I found this recipe through Constance at The DIY Diet, whom I’ve profiled before. Constance has tons of really low-cal recipes, and I love a good soup. Healthy Meal: Blueberry-Onion Sauced Pork Tenderloin

When I bought those pork cutlets and was looking for something to do with them and cherries, I first started by looking for pork and fruit. This is one of the things that came up, and it looked great, so I saved it for later. Usually when I save things for later it means, oh, never, or at least a few months later. Healthy Meal: Pork Chops with Brandied Cherry Sauce and Zucchini with Walnuts

As I mentioned in my post this morning on grapes and how expensive they were, my roommate has a ton of cherries she wants used up. I also picked up some pork cutlets yesterday on a whim, because they were on sale for really cheap. Finally, I have some zucchini and yellow squash that’s going bad in the fridge. The solution?
