Healthy Meal: Vegetarian Chili and TGI Friday’s Spinach Artichoke Dip

I promised you full writeups of my healthy Superbowl recipes, so here you go! I didn’t end up making the chicken because I ran out of parmesan, and the chili and dip was filling enough that I didn’t need it anyway. I’ll make that recipe another time and review it. Chili recipe notes:I use just one tbsp of olive oil – it’s still enough. This time, I skipped the turkey and replaced it with textured vegetable protein (TVP) to make it vegetarian, but I’ve made it in the past with just turkey, and even with both turkey and TVP. I …

Healthy Meal: Spicy Shrimp and Bok Choy Noodle Bowl

I’ve made this recipe before and actually loved it, but now that I’ve discovered shiritaki noodles I thought I could cut some calories and make it even healthier. However, Daily Plate was having some problems when I tried to put this in, and it originally told me the recipe was 39 calories. I got ridiculously excited, and was disappointed when I came to my senses and realized that wasn’t possible. The server issues went away, and now it’s showing a more appropriate 158 calories. You Know You’re a Crazy Running Blogger When… #2 and #3 (double delight!)

I caught up on my running blog reading for the last two days – it took me more than three hours. I really hope I am never away from Google Reader for a week, or I will really be in trouble. Total count: 60 subscriptions. And that doesn’t include the diet/fitness blogs, which I haven’t yet caught up on. I’ll put all of these up in some type of sidebar eventually, but I’m feeling a little lazy right now, and I have some actual work-work that I really should get going on. Also, Vanilla’s hilarious post reminded me of another …

Random Thoughts on a Friday

I did much better today than yesterday at the conference. After the cookie incident in the afternoon, there was another cookie incident – I had a few glasses of wine that helped me decide it would be a good idea to chow down on two more cookies for dessert. On the positive side, after the original cookie incident, I found out that my meeting actually started at 5 instead of 4, so I threw on some workout clothes and got in a quick 2.4 miles on the treadmill before showering, throwing my business clothes back on, and returning to the …
