Healthy Meal: Finnish-Style Split Pea Soup

Today for lunch, I present Finnish-Style Pea Soup. I found this recipe through Constance at The DIY Diet, whom I’ve profiled before. Constance has tons of really low-cal recipes, and I love a good soup. I’ve actually never had pea soup before, but I had some pork to use up (which I figured could substitute for the ham), so I thought I’d give it a try. Recipe notes:I didn’t want to make a ton of this, so I cut it down by using 1/2 cup split peas, 1 whole carrot, 3 oz pork tenderloin, 1 stalk celery, 1 red potato, …

Healthy Meal: Curried Butternut Squash Soup and Waldorf Salad with Epic Dressing

Today’s lunch is really combining two favorites. I love butternut squash soup because it’s so healthy, but thought I would try a different recipe to mix it up. My old recipe for butternut squash soup has an apple thrown in, so I thought maybe I’d combine it with a favorite Waldorf salad of mine that has apples in it… Um, so I totally just went to go find the link to the last time I posted butternut squash soup, and realized I had eaten it with this salad! Wow, am I predictable or what. This time I used grapes instead …

Healthy Meal: Zuppa Ossa Buco

Today’s lunchtime soup is brought to you by the fact that I had ground turkey going bad in my fridge, and this soup called for various ground meats, for which I figured I could substitute turkey. The recipe was supposed to make 4 bowls, and I cut it in half, therefore expecting to get 2 bowls. Instead, I got 3 large bowls of soup. Unfortunate, because last night I alreayd had dinner when I made this, so I was already going to have one extra serving (after bringing 1 for lunch today). Now I have two. It is pretty good, …

Healthy Meal: Waterzooi de Poulet

Well, I’m not in the best of moods today. I made this for dinner last night (went out after without posting), but I was going to have it again for lunch today, so I figured I’d post then. I packed it all up in my favorite soup mug, cut a nice chunk of baguette to go with it, and even chopped up some carrots to have as a mid-afternoon snack. Unfortunately, I stopped at the pharmacy on my way into work, and totally left my lunch on the counter. The good news: I called the pharmacist and he’s leaving it …

Healthy Meal: Minestrone alla Genovese and Panini con Rucola e Prosciutto

Tonight’s dinner I was kind of concerned about. It’s a two-part dinner, and I checked out the calories before I made it. The soup alone was 690, and I was sure that the grilled ham and cheese would add a ton! However, I was really hungry, and decided to make both anyway. I tried to take the pictures with no flash, but I think they came out worse than with the flash. Our living room just isn’t bright enough for photography, unfortunately. But see how I got all artistic and put dots of pesto on the sandwich plate? 🙂 Recipe …
