Our grocery store has had red bell peppers on sale for a week or two now, piles and piles of beautiful red shiny skins. I’ve been looking for recipes to use them up (not that that’s a huge problem – I love red peppers and used to eat them constantly as a childhood snack). One of the nice things about being on a travel project is that I don’t need to go into the office on Fridays. No one else on my team is based in New York, so we’re all conversing via IM, e-mail, and phone anyway. Healthy Meal: Spicy Shrimp and Bok Choy Noodle Bowl

I’ve made this recipe before and actually loved it, but now that I’ve discovered shiritaki noodles I thought I could cut some calories and make it even healthier. However, Daily Plate was having some problems when I tried to put this in, and it originally told me the recipe was 39 calories. I got ridiculously excited, and was disappointed when I came to my senses and realized that wasn’t possible. The server issues went away, and now it’s showing a more appropriate 158 calories. Healthy Meal: Miso Soup with Shiritaki Noodles and Daikon

As I mentioned in my earlier post, I found shirataki noodles at the grocery last night, and I was really excited! I had also found some daikon a week or so ago, so I had been planning on making an Asian soup with it (I usually can’t find daikon, and substitute parsnips, which aren’t quite the same). Healthy Meal: Minestra

Yesterday we had our quarterly staff meeting. QSM involves sitting around at meetings, eating tons of delicious but unhealthy food. It always culminates in cocktail hour starting at 4 PM, and then company-sponsored after-parties where you can basically keep eating hors d’oeuvres and drinking until 4 AM. Unfortunately, I did just that… and managed to eat more than 4,000 calories! Unbelievable. Everything was really high-cal (cookies, brownies, various fried hors d’oeuvres, etc), but I still can’t believe how much I was able to eat.
