Healthy Carb-Loading Meal: Nicoise-Inspired Salad

Tomorrow, I’m going to be hiking my very first 14er (mountain with a summit that is 14,000 feet or higher). But when my friend Mike and I went hiking yesterday on a much smaller peak for about 90 minutes, I was completely wiped out. Hiking can be pretty intense! Today was a super productive day for me – which is why I’m not writing this blog post till so late at night! Quick Tagine-Style Chicken with Green Pepper and Tomato Salad

I’ve had this recipe saved for a while, and never gotten around to making it. Today I had some chicken and some cilantro that was going bad, so I thought this would be a good fit. After picking up some prunes, I was good to go.Chicken recipe notes:I used 1/2 tbsp of oil, and 6 oz chicken. I kept the rest of the recipe as-is, just cut down for one serving.
