Healthy Meal: Curried Butternut Squash Soup and Waldorf Salad with Epic Dressing

Today’s lunch is really combining two favorites. I love butternut squash soup because it’s so healthy, but thought I would try a different recipe to mix it up. Healthy Meal: Sirloin Bourguignonne Burger and Greek Salad

This is one of the first things I “learned how to cook” when I first started cooking. It’s not really cooking, per se; it’s really just grilling and combining a few different ingredients. However, it comes out really good, and the flavors work well together. I paired it with a simple Greek salad. Healthy Meal: Iceberg Salad with Tangy Cilantro Dressing

Tonight I’m trying to save lots of calories for all the alcohol I’ll be drinking, so I wanted something light. When I started thinking about it, for some reason I got a craving for this simple salad with a yummy cilantro-lime-onion dressing. It’s very simple and very low-cal, but unfortunately not that nutritious… can’t win them all! Usually this gets paired with a meal (I usually make chicken tortilla soup with it, and go for a Mexican theme), so it doesn’t matter too much. Healthy Meal: Spanakopita Chicken Meatballs with Spicy Cucumber and Yogurt Sauce

Work has been a bit busy the past few days, but it’s finally the weekend and I am on vacation until Wednesday!!! Hurray.
