I knew I wanted soup for lunch. I also knew I wanted to use up the rest of the collard greens in my fridge. Searching on Food Network, I found a yummy-sounding recipe from Gourmet Magazine for Gumbo Z’Herbes with Red Beans. I had no interest in making 10-12 servings of this, so I used the recipe just as a guide for flavors while I made up my own proportions. Healthy Meal: Portuguese Sausage and Greens Soup

For this weight loss challenge to work, I can’t just exercise; I need to make sure I’m eating healthy as well or all those hours spent in the gym will be for naught. I’m trying to stick to a mostly low-carb diet (I’m still eating plenty of fruits and veggies, but avoiding potatoes, grains, etc). Just call me carrot girl

Back from the doctor’s, and hurray! I am neither pregnant nor dying. My bloodwork was almost all back – there were a few things that weren’t quite ready, but she said they were extremely rare and she doubted they would come back positive, but she’d call me if they did. Anyway, I’m negative for just about everything, with the exception of some silly stuff. For example, mono came up, but there are a few different levels they test, and the old level came up showing that I had mono when I was younger, but the current level shows I’m fine …

Tasty treats from the angry lobster ghost death zone

You’ve all been asking about pics of my Thanksgiving food. I forgot to take any!!! I’m so bummed – I had everything set out really nicely and it would have been a gorgeous buffet picture. The turkey breasts especially looked awesome – they were perfectly browned, and I had bay leaves sitting on top of them too. The leftovers are not nearly as nice looking, but here at least is a picture of the caramel pumpkin gingersnap cheesecake. I’m tired

Today I cooked:-Roasted asparagus soup-Maple glazed acorn squash-Cornbread-Sage and lemon stuffed turkey-Cranberry sauce-Apple gravy-Mashed potatoes-Wild rice-Green bean casserole (made the french fried onions from scratch)-Garlic collard greens-Cornbread stuffing (yup, even baked the bread myself)-Caramel pumpkin gingersnap cheesecake (oh, the crust? Not a pre-bought shell – I made it)-Apple crisp All by myself (I literally wouldn’t let my mom set foot in the kitchen to get a glass of water – I got it for her), all from scratch, and everything came out absolutely perfect and delicious.
