Diet inspiration from a lazy Sunday morning

Despite my push to increase my workouts last week (successful, too – I logged 450 minutes of gym time in the last 7 days!), I have been gaining weight. I blame my all-inclusive trip to Punta Cana, my singledom that is encouraging me to go to bars and drink in order to meet guys in NYC, and my training last week that had catered food about which I had little to no choice in eating. Okay, so maybe those tequila shots with my team were another story… Speaking of which, last night I was out with my friend Kristen until …

Low-Key Cooking and Cleaning

While my weekend was low-key, it was pretty darn fantastic, and I feel great about getting this week kicked off right. This weekend marks the start of the spring marathoning season for me – only one week’s break from now until I finish my 50 states!!! Crazy. Now I just have to hope I don’t get injured… On Friday, my mom came down from Albany (yes, in the midst of the big snowstorm). She took the Megabus so she wouldn’t have to drive, and apparently had a very nice trip without the roads being bad. After a quick shopping expedition …

Healthy Meal: Turkey Dog and Chow Chow Slaw

So you all know that quote from Mean Girls about Halloween? “Halloween is the one night a year when girls can dress like a total slut and no other girls can say anything about it.” What can I say – I dress very conservatively most of the time, but on Halloween, I live by that rule 🙂 Well, I won’t bare my stomach, but I definitely go for the short skirt, low cut top, etc. Boyfriend and I want to dress up as something as a couple, and we’re not sure what yet, but I want to be in great …

Healthy Meal: Protein Pancakes

I often get asked how I recover from a marathon, specifically with regards to food. My answer? I eat what I’m craving… but make it healthy and make sure to get lots of protein. While we were in New Hampshire, Steph’s friend that we stayed with, Pete, put together a gift bag for each of us that included a bottle of real New Hampshire maple syrup. I went to a lot of trouble to get it through security from Portland, so when I woke up on Monday morning, it was top of mind. You all know I love creative uses …

Healthy Recipe: Veggie Cream Cheese

Several weeks ago, I ended up with an extra bagel after a breakfast at work, so I wrapped it up and took it home and popped it into the freezer. I rarely eat bagels (too many carbs, too many calories), but I figured it would be good for a pre-race breakfast the day before a marathon. Now, I have a thing about everything bagels: I really only like them with veggie cream cheese. However, while there are plenty of varieties of fat free and other fairly low calorie cream cheeses out there, it’s hard to find flavored versions. Besides, I …
