Easter Eve Cinnamon Coffee

I’m having a rather lazy Saturday morning, sitting around catching up on some reading and emails while sipping coffee. I ordered a new set of coffee mugs online that came yesterday, and I am in love with their bright, fun Easter egg-y colors. To further add to the laziness, this will be the shortest post ever. I just wanted to share a little tip I learned from my friend Kelli last weekend in Florida: when you brew your coffee, add a sprinkle of cinnamon to the grounds. It adds a great flavor to the coffee, and I find that when I …

Healthy Meal: Pineapple Fried “Rice” (Quinoa)

Healthy Pineapple Fried Rice

One of my favorite things about moving to Denver is my new commute from Dallas. When I used to fly to New York City on Thursday nights, I would have a 3.5 hour flight that would usually land around 11pm or midnight… meaning I would probably start falling asleep for the last hour of the flight, and then I’d get home and immediately crawl into bed. But now that I’m living in Denver, it’s a much shorter flight, and I’m headed west across a time zone, so I’m getting some extra time back. Tonight I got home at 8pm, and …

Review/Giveaway: Fairlife Milk and Magic Bullet Blender

When I got home to Colorado this weekend, I had (and still have) a lot to do to make it really feel like “home.” My closet hadn’t been unpacked yet, nor had my bookcases. And while I had unpacked the kitchen, I hadn’t taken enough grocery trips to truly stock it up. Since I travel four days a week, my pantry is mostly stocked with dry goods and frozen food – anything that goes in the fridge has to be something that will last. Of course I eat fresh fruits and vegetables, but I try to buy only enough for …

Gluten-Free Oatmeal Chocolate Chip “Accident Cookies”

Yesterday I had to go to a cookie swap. Those of you who are long-time readers of this blog have seen me post many recipes; however, I have never yet posted a dessert recipe. There is a reason for this! Although I consider myself to be a pretty good cook, I really suck at baking. Something always goes wrong, and while you can usually correct cooking mistakes by adding things as you go, with baking, it’s pretty much done when it goes into the oven. For the cookie swap, I planned to make this recipe for chewy butterscotch graham cookies. …

Healthy Recipe: Goat Cheese, Roasted Butternut Squash, and Port-Soaked Cranberries

Goat Cheese And Roasted Butternut Squash With Port Cranberries

As I mentioned yesterday in my Thanksgiving post, I mostly kept my Thanksgiving menu pretty traditional and served all the same dishes as last year… except one. While I usually serve butternut squash soup as an appetizer to start the meal, soup is really just too filling to kick off a Thanksgiving dinner. Plus, I’d rather serve something that guests can munch on while chatting, rather than having to be seated with utensils in hand. Fortunately, my mom shared with me this wonderful hors d’oeuvre recipe that she had picked up at her health food co-op. Since I couldn’t find …
