Giveaway: Krusteaz Pancake and Waffle Mixes

Last night was supposed to be Bachelor night, but I had to postpone because of the inspection on my new house. However that actually worked out perfectly, since today was National Pancake Day… and instead of the usual Bachelor night fare, I did breakfast for dinner! I used Krusteaz Blueberry Belgian Waffle Mix to make cute little heart-shaped blueberry waffles, and then I found a zucchini/onion/mozzarella frittata recipe that came out really good, especially with a dollop of tomato sauce and some freshly julienned basil leaves on top. Last night, I hosted a bunch of my girlfriends over at my place to watch The Bachelor: Prince Farming. I got really into the Bachelor when I was down in Dallas, in part because I had a fabulous group of girlfriends with whom I watched the show most weeks. Now that I’m in Denver, I decided to try to replicate that here! Happy Thanksgiving!

This Thanksgiving was a bit of a strange one for me. I’m not able to see my family for the holidays this year, so instead, I decided to host my “Colorado family” for Thanksgiving at my place. One of the things I am most thankful for this year is the wonderful friends that I have here. I was really worried about moving to Colorado and having to start all over with relationship building, but I’ve strengthened some old relationships and also been pleasantly surprised at how easy it is to build new relationships here.
