Last night was supposed to be Bachelor night, but I had to postpone because of the inspection on my new house. However that actually worked out perfectly, since today was National Pancake Day… and instead of the usual Bachelor night fare, I did breakfast for dinner!
I used Krusteaz Blueberry Belgian Waffle Mix to make cute little heart-shaped blueberry waffles, and then I found a zucchini/onion/mozzarella frittata recipe that came out really good, especially with a dollop of tomato sauce and some freshly julienned basil leaves on top. And for dessert? I adapted this Krusteaz Cinnamon Streusel Coffee Cake recipe by subbing applesauce for butter and adding butterscotch chips. (The applesauce worked well, but the chips fell to the bottom and made a sweet crust… not bad, but not ideal.) I was really amazed how quick and easy it was to make a full breakfast for dinner, since I rarely cook waffles/pancakes; my morning MO is usually either oatmeal/granola or power bars for breakfast, or sometimes a simple breakfast sandwich with a fried egg if I’m feeling ambitious. But this may become a new staple for me in the evenings, since it was really delicious but also a lot easier than I expected.
I didn’t know that breakfast for dinner was so popular, but in a national survey, Krusteaz found that 91% of Americans say they eat breakfast for dinner, with 56% doing so at least once a month. I guess I am in the minority having not tried it before! A variety of factors contribute to the rising popularity of breakfast for dinner, with the main appeal being ease of preparation compared to a traditional dinner meal. For families especially, it’s also “a fun way to break up the monotony of weekly dinner night” cited by 44%.
Since February is National Hot Breakfast month, Krusteaz sent me these mixes as part of their campaign to get more people trying Breakfast Nights for dinner. I thought it was a fun new twist, and judging from the email response I got from my friends when I told them what I was planning to make, people love the concept. I may have to repeat it again soon!
