Healthy Meal: Raw Vegan Pizza

I haven’t really been posting my raw vegan recipes becaues they’re not really cooking, and so many people thought it was gross when I had that kale smoothie that I didn’t know what a receptive audience I’d have. I think this is one of my favorite raw vegan recipes I’ve tried so far – pizza! I made two of these and when I ate the first one and saw how amazing it was, I took a picture of the second so I could post it.


In a food processor, combine:
1 large tomato
1/4 red onion
2 cloves garlic
Parsley, basil, oregano, and whatever other herbs/spices you want

Process until mostly smooth and liquid, then pour into upside down portobello mushroom caps (get the largest ones you can find). Sprinkle vegan grated topping (similar to parmesan, but no dairy. Sadly it’s not raw but I only used a tiny bit) on top. Done, in less than five minutes!

85 calories for two large caps

This is totally filling, but very low in calories, so be sure not to make it a meal unless you’re going heavy on your other meals that day. It’s totally delicious though, and takes less than 5 minutes! So easy. If you really don’t want to do the raw thing, I think it would be delicious if it were baked for a few minutes. This is definitely a keeper!

  1. The first thing that came to my mind when I saw the picture. I’d thought it was some kind of petrified crap. Sorry for saying that but hope it was tasty.

  2. I have no issues with eating raw. But I do have issues with mushrooms. It would be cool if I could find something else to replace it with. Any suggestions?

  3. Christie and SLB – the other recipes for pizza that I saw suggested taking a zucchini, cutting it lengthwise, and scooping out the seeds. I bought both the mushrooms and the zucchini, but then the mushrooms were so good I never tried the zuchcini! I bet it would be tasty though.

  4. Ok, 15% BF I want your trainer…or at least you now need to post everything they tell you to do!!

    I’ve definitely been working on my eating but not sure I could go totally raw. Did you go cold turkey on the switch? Or has it been gradual?

  5. YUM! Thanks for sharing that with us! I can’t wait to try that out! Slowly I’m trying to cut out meat of my diet (except for fish – but the fish we do eat, we caught that day!!) Keep them coming!
