Healthy Meal: Creamy Hot Apple B-Fast with Brown Sugar Crunch

In case you haven’t heard of Hungry Girl, it’s a website that sends out a daily e-mail with fantastic food product reviews and also some innovative recipes that are pretty healthy. They do support the use of Splenda and other products that have crappy chemicals in them, but for the most part, they recommend good stuff. A few days ago, they published some breakfast recipes, one of which sounded amazing. I decided that as soon as I got back home from traveling, I’d try making their Creamy Hot Apple B-Fast with Brown Sugar Crunch. I used full-sugar Jello pudding, and …

Healthy Meal: Pork Chop with Mushroom-Onion Pan Gravy

Last night while at the gym, I got a call from a friend that I was to be at her apartment, way up in Morningside Heights, fed, dressed, and ready to go out… all in an hour. It normally takes me that long just to shower, dry my hair, and get dressed, so I needed to make something that would be ridiculously fast, and also ridiculously low calorie because of the drinking I’d be doing later. This recipe fit the bill, and also contained only ingredients that I already had (no time for a grocery run). Recipe notes:I basically followed …

Healthy Meal: Pork Chops with Cran-Apple Sauce, Scallion Potatoes, and Snap Peas

I first made this recipe last summer, and really liked it. When pork chops went on sale at Gristedes, I figured I’d try the recipe again and post it here for you all to enjoy as well 🙂 Recipe notes for the pork chop and sauce:I used a pretty big pork chop (6 oz instead of the standard 4), because I was really hungry. I grilled it on my Foreman instead of pan searing it, which meant no oil was necessary. For the sauce, I used a whole apple, 1/8 cup of dried cranberries, and 1/2 cup of juice, which …

Quick Tagine-Style Chicken with Green Pepper and Tomato Salad

I’ve had this recipe saved for a while, and never gotten around to making it. Today I had some chicken and some cilantro that was going bad, so I thought this would be a good fit. After picking up some prunes, I was good to go.Chicken recipe notes:I used 1/2 tbsp of oil, and 6 oz chicken. I kept the rest of the recipe as-is, just cut down for one serving. Salad recipe notes:You definitely don’t need that much oil for the dressing! For one serving, I used 1/4 tbsp oil, 1/4 tbsp red wine vinegar, and 1/4 tbsp lemon …

Healthy Meal: Vegetarian Chili and TGI Friday’s Spinach Artichoke Dip

I promised you full writeups of my healthy Superbowl recipes, so here you go! I didn’t end up making the chicken because I ran out of parmesan, and the chili and dip was filling enough that I didn’t need it anyway. I’ll make that recipe another time and review it. Chili recipe notes:I use just one tbsp of olive oil – it’s still enough. This time, I skipped the turkey and replaced it with textured vegetable protein (TVP) to make it vegetarian, but I’ve made it in the past with just turkey, and even with both turkey and TVP. I …
