Healthy Meal: Chicken Chili

This recipe was given to me a few years ago, when I was in college and went over to my friend Tyler’s house for a party. Tyler was a pretty good cook, and had made a whole pot of this chili for us to eat as we drank copious amounts of beer and played Kings. That particular house had a specific rule that if you drew one of the cards (I can’t remember which one now), you were doomed to be the Boxhead – which meant you had a beer case put on your head until the next person drew …

Healthy Meal: Kale Breakfast Smoothie

I mentioned that after running camp I wanted to start trying to eat cleaner foods. One thing I had at camp that was incredible is a raw breakfast smoothie. In a blender, combine:2 cups raw kale1 banana1/2 cup blueberries1 cup almond milk Blend until smooth. If desired, add flax seed. However, I’m going to be eating a lot of protein later, so I skipped it. Also, it’s better if you chill after blending, but I was impatient and ate it at room temp 🙂 Nutrition info:68 calories for the kale90 calories for the banana35 calories for the blueberries40 calories for …

Healthy Meal: Grilled Swordfish with Couscous and Salad

I haven’t posted a healthy meal in a very long time, mostly because I’m only home two or three days a month lately. The rest of my time is spent in various hotel rooms with no kitchenettes or other cooking methods. With a little inspiration from WikiHow, I’ll show you. First, a quick list of things I brought from …

Healthy Meal: Frank and Beans

This weekend wasn’t really a good one for me cooking-wise. I was so looking forward to coming back and making yummy food, but I ended up being so busy that I actually didn’t cook almost at all! Thursday night for dinner I made tofu tagine, but I put too much turmeric in and it came out kind of gross looking because it was too yellow, so I didn’t take a picture or post it. Then Friday afternoon I made a quick healthy lunch of a grilled turkey burger patty and peas, but that’s not so much a recipe. Saturday I …

Grilled Pork Chop and Veggie Lentils

Yesterday morning for Easter, my mom made delicious almond biscotti and apple crostada. I helped myself to five of the biscotti (100 cals/each) and one piece of the crostada (250 cals). That was a pretty big breakfast! For lunch, I had just a turkey burger (plain, no bun) and a cup of steamed green beans. That put me just about on track for dinner, with 400 calories to “spend.” Not wanting to buy any food, I decided to make do with what I had in the cupboard, and so I went with this recipe. I had made this before with …
