Healthy Meal: New England Veggie Clam Chowder

Despite it being almost April, this afternoon I felt a bit of a chill in the air due to some impending rain – and I found myself desperately craving clam chowder. Clam chowder is usually a pretty unhealthy dish, thanks to the potatoes and heavy cream, but I have a ton of Chobani Greek yogurt in the fridge – surely that could be used to thicken it? Healthy Meal: Homemade Veggie Ramen Noodle Soup

This morning, our Athleta running group was teed up for our first double digit run: 10 miles! The More Half Marathon is just 3 weeks away, and everyone is doing an awesome job with the training plan. Healthy Meal: West Indies Pepper Pot Soup

This soup has been in my arsenal of recipes to try for a few days – it’s extremely different than anything I’ve made before, and included a vegetable I’ve never cooked with. I’ve had taro root bubble tea, but never tried it in cooking, and I decided I was game for the adventure. Healthy Meal: Gumbo Z’Herbes with Red Beans

I knew I wanted soup for lunch. I also knew I wanted to use up the rest of the collard greens in my fridge. Searching on Food Network, I found a yummy-sounding recipe from Gourmet Magazine for Gumbo Z’Herbes with Red Beans. I had no interest in making 10-12 servings of this, so I used the recipe just as a guide for flavors while I made up my own proportions. Healthy Meal: Portuguese Sausage and Greens Soup

For this weight loss challenge to work, I can’t just exercise; I need to make sure I’m eating healthy as well or all those hours spent in the gym will be for naught. I’m trying to stick to a mostly low-carb diet (I’m still eating plenty of fruits and veggies, but avoiding potatoes, grains, etc).
