Healthy Meal: Pork Chops with Mushrooms and Asparagus

I started out by adapting a Food Network recipe for Pork Chops with Wild Mushrooms, but honestly, I made so many changes that the recipe really isn’t the same. And so I present to you my own quick and easy version. Recipe notes for the asparagus: Preheat your oven to 450. Trim the asparagus (I had about 12 stalks) by holding it in two hands and bending them till they break – this is a foolproof way to get rid of the woody stems at exactly the right spot. Spread them out on a baking sheet, and use a pastry …

Healthy Meal: Champagne Chicken and Baby Beluga Lentil Salad

When I was at Trader Joe’s yesterday, the sample of the day was black beluga lentils on a bed of lettuce, with a balsamic vinaigrette on top. I thought it was delicious, and grabbed a bag of the beluga lentils so I could try making it myself. While I was trying to decide what to pair with it, my mom sent me a link to some recipes from French Women Don’t Get Fat (I had read the book several times before, but not really tried many recipes after trying the leek soup diet for a day or two and hating …

Healthy Meal: Blueberry-Onion Sauced Pork Tenderloin

When I bought those pork cutlets and was looking for something to do with them and cherries, I first started by looking for pork and fruit. This is one of the things that came up, and it looked great, so I saved it for later. Usually when I save things for later it means, oh, never, or at least a few months later. This one I pulled out immediately though, and I’m glad I did. As you can see from the pic, I paired it with beets and Normandy blend from Whole Foods (it’s haricots verts, carrots, and wax beans). …

Healthy Meal: Pork Chops with Brandied Cherry Sauce and Zucchini with Walnuts

As I mentioned in my post this morning on grapes and how expensive they were, my roommate has a ton of cherries she wants used up. I also picked up some pork cutlets yesterday on a whim, because they were on sale for really cheap. Finally, I have some zucchini and yellow squash that’s going bad in the fridge. The solution? Plugged “cherries pork zucchini” into the search engine at Food Network, and found this recipe. I love that search engine. It looks pretty nice, doesn’t it? Pork recipe notes:I grilled the pork on the Foreman to avoid using oil, …

Healthy Meal: Greek Meatballs in White Wine Sauce and Baked Gigante Beans

I’ve had these recipes in my online Food Network recipe box, and today I had ground turkey to use up, so I figured it was the perfect excuse! However, I wasn’t that impressed. Yeah, the pictures kind of suck too. I didn’t really take the time to pretty up the meatballs because I couldn’t figure out how once they had started falling apart. The beans look decent though, and you can also see the Greek salad I made to go with it. Meatball recipe notes:I used lean ground turkey instead of the meats, because it was what I had, and …
