My Friday night kicked off with a happy hour at Sanitas Brewing in Boulder with another Beaver Creek ski instructor. Tacos, quesadillas, and lots of talk about both running and skiing. Speaking of returning to “the new normal”… this weekend, I was thrilled to convene my friends for my first “party” in over a year. Normally, Cinco de Mayo is a great excuse for me to host dozens of friends to eat Mexican food and drink margaritas. My first weekend without my mom! And also, the first weekend it really felt like things were starting to get back to normal post-pandemic. I kicked it off with a Friday night date to Old Town Louisville. Weekend Recap: Mom’s Last Weekend in Colorado

My weekend kicked off in a fun but bittersweet way: a farewell dinner for my mom with my friends Chris, Mark, and their kids. We went to Tequila Y Mezchal, a new Mexican restaurant that just opened in Superior, and it was delicious. I got the shrimp quesadilla, which was absolutely fantastic… crispy but not oily.
