I promised you full writeups of my healthy Superbowl recipes, so here you go! I didn’t end up making the chicken because I ran out of parmesan, and the chili and dip was filling enough that I didn’t need it anyway. I’ll make that recipe another time and review it. Healthy Meal: Hoppin’ John, Collard Greens, and Grilled Pork Chop

Whenever the holidays come around, I like to plan elaborate menus and make traditional foods. For New Year’s, my family didn’t have any traditions, so I thought this would be a great opportunity to try out Hoppin’ John, a black eyed peas and rice dish. Hoppin’ John is a Southern soul food dish traditionally served on New Year’s Day and thought to bring good fortune in the New Year, especially when served with collard greens. Healthy Meal: Quinoa with Cranberries, Walnuts, and Kale

Bonus lunch meal day! Because I cooked for a friend last night, and therefore didn’t have leftovers, I had to whip something up this morning to bring for lunch today. I opted for quinoa with a few ingredients stirred in. I found this ingredient combination online a while ago (no idea where though – maybe YumSugar?) and have had it saved for a while to try.
