Healthy Recipe: Turkey Shepherd’s Pie

St. Patrick's Day House Party

Remember how one of my New Year’s resolutions was to have people over at my home at least once a week? I’m not doing well with my other resolutions but that one is going strong. One of my biggest reasons for wanting to host people so often was that I hoped it would make me less uptight and more go-with-the-flow, rather than stressing out about every little detail. Well, you can’t get much more relaxed and go-with-the-flow than everyone sitting around a blanket on the floor in my new den! Even though I just closed on my house yesterday morning …

Healthy Meal: Brandy and Orange Chicken Breasts Topped with Stuffed Shrimp

You asked for it, and you got it: my meals and recipe modifications are back! After a grueling race yesterday (halfway done with the race report), my muscles are pretty sore and in need of some recovery. Combining that with the fact that I have a ton of frozen proteins I want to start using up, the solution was to use crab, shrimp, and chicken in this recipe from Rachael Ray for Brandy and Orange Chicken Breasts Topped with Stuffed Shrimp. I wanted to make the recipe for two servings instead of four, but I also wanted to use up …

Healthy Meal: West Indies Pepper Pot Soup

This soup has been in my arsenal of recipes to try for a few days – it’s extremely different than anything I’ve made before, and included a vegetable I’ve never cooked with. I’ve had taro root bubble tea, but never tried it in cooking, and I decided I was game for the adventure. When I went to the grocery to buy the taro, it rang up as “malanga,” which I tried to tell the cashier wasn’t the right thing. He assured me that “malanga” was just the Spanish word for taro, but a search on The Cook’s Thesaurus taught me …

Healthy Meal: Chicken Scarpariello

Even though I had chicken for dinner yesterday, I had a craving for it today for lunch. I decided to make a Rachael Ray recipe that’s been sitting in my Food Network Recipe Box for months – Chicken Scarpariello.Instead of 2 tbsp extra virgin olive oil, I just sprayed the pan with my Misto and that seemed to work out fine. I didn’t have red bell peppers, so I substituted green, and I also didn’t have parsley, so I skipped that at the end (it probably would have made the flavors even a little tangier, but not a huge loss). …
